Gluten Free Strawberry Cake

Gluten Free Tuesday

My husband loves strawberry cake and for some reason they do not make a Strawberry Gluten Free Cake Mix.  I prefer baking to be as simple as possible so I am primarily a cake box baker, so I had to improvise! I bought Pamela’s Vanilla Cake Mix and added fresh strawberries to the mix. I pretty much followed the instructions from the package with a few changes.

This turns out perfect and delicious!

Ingredients:

1 vanilla cake mix

3 large eggs

1/2 cup oil

1/2 cup of water (calls for 2/3 but with liquid from strawberries I reduced it)

8 strawberries pureed

Optional 1/4 teaspoon almond flavoring

Optional few drops of red food coloring to make it pretty

Baking Directions:

Cook at 325° for 25-30 minutes or until toothpick comes out clean.

Let cool and add a gluten free icing (most icing are gluten free) I prefer vanilla for this cake. Then top with fresh cut strawberries!
