gluten free & vegan peanut butter cookies

With my husband having Celiac and a chocolate allergy these Peanut Butter Cookies are a good option for his sweet tooth needs.

I sometimes bring these cookies to work for everyone to try. They are always surprised that a gluten free and vegan cookie could taste like a “regular” cookie, and they always eat them all!

Peanut Butter cookies are one of favorites and this is a great recipe! Enjoy!

Peanut Butter Cookies Gluten Free and Vegan
2 cups rolled oats
2 cups gluten free all purpose-flour (I prefer Bob’s Red Mill)
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1-1/2 cups Earth Balance Creamy Peanut Butter
1 cup Earth Balance Buttery Spread
1 cup granulated sugar
1 cup of firmly packed brown sugar
2 tbs of flax seed (Or another egg replacement)
6 tbs of water

Optional:
1/2 cup of raisins
1/2 cup of chopped pecans

Directions:
Preheat oven 350Β°
Combine oats, flour, baking powder, baking soda, and salt in bowl; set aside
Mix peanut butter and spread in a bowl until smooth. Then blend in sugars, then flax seed and water.
Beat in flour mixture until blended well.Β  Stir in raisins and pecans.
Chill 30 min.
Tbs size round balls on pan 2 inch. apart
Press down with fork to make criss-cross
Bake for 12 minutes or until golden
Allow to cool completely and then eat ’em up! Yummy!

These sound great! My kids love to bake with me and I love to expose them to new recipes. These will make a great treat this summer. I love the idea of adding raisins to them.

I wanted to invite you to link them up to the Everything Summer link-up. Click on my name for a direct link to the post. πŸ™‚

I was wondering if you can use almond butter instead of peanut butter

Yollys, I have not used almond butter before, but I do not think it would be an issue. If you try it let me know how it turns out!
