This is great news for me because my family has to eat gluten free and we try our best to use only organic products, but most cookies at the store are not.  Yes, there are more gluten free cookies now but most of these are not certified organic and non gmo.   Everytime my family wanted cookies I would have to make them from scratch, which is at least a 30 minute wait.  Also, as much as I love to bake, honestly, sometimes I’m just not in a baking mood.  Keeping boxes of ginnybakes cookies in stock  in our pantry has been awesome for me as the baker of the family and gives me break.

Conveniences aside, these are some seriously delicious treats and don’t forget they are certified gluten free, organic, non gmo and kosher!  My husband and boys couldn’t stop eating them, seriously I had to tell them to stop so I had products to take pictures for this post!

All the cookies we tried from ginnybakes were delicious. These are crispy but not too crispy cookies.  The cookies come in 5.5 oz boxes with approximately 11 cookies. Many of the cookies are also available as ginnyminis; these bite sized  snack-packs are sold as a box of six  1.25oz bags of mini cute cookies. 

My personal favorite were the chocolate chip oatmeal bliss, what a perfect name for this cookie made from organic gluten-free rolled oats with organic dark chocolate chips, shredded coconut, hints of cinnamon and vanilla!  My husband said he liked them all and couldn’t pick a favorite.  I will say he did eat the box of chocolate chip macadamia love by himself.  My boys loved the chocolate chip love, a classic cookie made from high-quality, organic ingredients.  What a great organic treat for the kids!

I also made the 2 bake mixes I received and they both turned out great.  Each ginnybakes mixes were easy to make and only called for a few ingredients to add to the mix.  This is a great way to quickly make organic cookies or brownies.  Who doesn’t love a warm cookie right out of the oven?

Ingredients
  1. 1 cup corn kernels
  2. · 1 cup black beans
  3. 1/2 cup finely chopped red pepper
  4. 1/4 cup finely chopped red onion
  5. 1/4 cup chopped cilantro
  6. 2 tbsp lime juice
  7. 1/2 tsp each cumin, salt and pepper
Instructions
  1. Toss corn with black beans, red pepper, red onion and cilantro.
  2. Stir in lime juice, cumin, salt and pepper. Adjust seasoning to taste.

Chips and salsa just scratches the surface when it comes to dipping opportunities. Dive into multiple levels of flavor, or go one-by-one. Serve up this eye-catching layered dip in individual cups so guests can double dip, and triple dip, and so on - until it’s all gone.

Ingredients
  1. 1 cup guacamole
  2. 1/4 cup tomatillo salsa
  3. 1 cup spicy hummus
  4. 1/2 cup sour cream
  5. 1/2 cup tomato salsa
  6. 1/2 cup shredded Monterey Jack cheese
  7. 2 tbsp chopped fresh cilantro
  8. Que Pasa Carnival Tortilla Chips
Instructions
  1. Stir guacamole with tomatillo salsa until smooth; set aside.
  2. To each individual cup (about 2/3 cup to 3/4 cup glass), layer in 2 tbsp each spicy hummus, 2 tbsp guacamole mixture, 1 tbsp sour cream and 1 tbsp salsa. Garnish with 1 tbsp cheese and some cilantro.
  3. Serve with tortilla chips.
Notes
  1. Tip: Substitute Cheddar cheese for the Monterey Jack cheese.
  2. Substitute regular hummus or roasted pepper hummus for a milder version.
  3. Calories per serving (1 prepared cup): 185

Need a quick meal or after school snack ?  I have been in this situation plenty of times because of school, appointments, work or any other reason to be running behind! I also have to consider a picky eater who has to eat Gluten Free! What’s a Gluten Free Mom to do?

The pizza is more a personal pizza size (10.1 oz) but my boys and I can share 1 for a snack. My husband eats one by himself as a meal. It is a thin crispy crust that has a tasty sauce and uncured pepperoni! 

It is great to know I have a good back up plan for those days I can’t cook  us a meal.  I think Udi’s frozen pizza is a much better option than eating out because it’s gluten free, less expensive, it’s easy to bake and it’s delicious!

Finding quality Gluten Free foods for a good price can be difficult, don’t get me started on frozen gluten free options!  Luckily, Walmart has answered their customers request for more Gluten Free products and are adding more to their selection at a great price too. 

I love that my local Walmart has their frozen food section with large signs labeling their Gluten Free products.  I hate it when the gluten free products are just randomly placed with other products with no signs pointing out products are gluten free.  Walmart has made it really easy to find frozen Gluten Free products and I appreciate anything that makes my shopping experience easier!  I hope they continue this trend on all their aisles.

As many of you know I have to cook gluten free for my husband and son and I also prefer easy recipes.  For a recipe I usually search and search for a recipe that uses simple ingredients and looks easy for me to bake.  I have now discovered the perfect cookbook for me, Sweet & Simple Gluten-Free Baking: Irresistible Classics in 10 Ingredients or Less!  A book that truly speaks to me and anyone else who likes simple but delicious recipes!

The author of this book, Chrystal Carver, has created a cookbook that is easy to follow for any level baker!  It is filled with traditional desserts and sweets that are easy to prepare. Almost all the recipes in this book are made with 10 ingredients or less and are common ingredients you will most likely already have in your kitchen.  Also, no crazy or hard steps in the directions!  I hate it when I read a recipe and I have to look up how to complete that step because I have no idea what they are talking about; with this cookbook you will not have that problem.  

Chrystal Carver, the author, has also included very helpful bakers notes and tips with most of the recipes.  

One of the first recipes I tried from Sweet & Simple Gluten-Free Baking was the Apple Crisp Recipe and I am sharing this recipe with you too!  

Gluten Free Apple Crisp Recipe from Sweet & Simple Gluten-Free Baking Cookbook

Ingredients
  1. 4 medium granny smith apples, cored, peeled and sliced
  2. 3/4 cup brown sugar, packed
  3. 1/2 cup all-purpose gluten-free flour blend*
  4. 1/2 cup gluten-free quick oats
  5. 1 teaspoon ground cinnamon
  6. 1 teaspoon ground nutmeg
  7. 1/3 cup butter, softened
Instructions
  1. Preheat oven to 375°F (190°C). Position the oven rack in center of oven. Lightly spray or grease a8x8x2-inch square pan.
  2. Spread apple slices evenly on the bottom of the pan. In a medium mixing bowl, combine the brown sugar, flour, oats, cinnamon, nutmeg and sugar. With a pastry blender, cut the butter into the flour mixture until it resembles coarse crumbs.
  3. Evenly sprinkle the topping over the apples.
  4. Bake for 30 minutes or topping is golden brown and apples are tender when pierced with a fork. If desired, serve warm with vanilla ice cream or whipped cream. Store at room temperature.
Notes
  1. *For this recipe, Chrystal uses her all-purpose gluten-free rice flour blend that has been prepared in advance. Rather than making a whole batch, you can scale it down to ¼ cup white rice flour + 2
  2. tablespoons tapioca flour + 2 tablespoons potato starch.

Gluten Free Apple Crisp Recipe from Sweet & Simple Gluten-Free Baking Cookbook

The Apple Crisp came out perfect the first time I made it! Doesn’t it look delicious?  My family ate it fast and thought it was wonderful especially topped with vanilla ice cream!  This will be a recipe I make again very soon! My husband has already marked several other recipes from this book for me to try, mostly his favorite sweets from pre-gluten free.

I highly recommend this cookbook to anyone who is looking for good gluten free recipes.  It is perfect for beginners or the experienced baker.
